Beef Stroganoff
Heat 1tbsp oil in a frying pan and fry the onions until soft but not browned. Remove from pan and set aside. Add another tbsp oil and add the strips of steak and the mushrooms. Fry for a few minutes, turning, until the steak is cooked to your personal preference. Add the onions back to the pan, add the brandy if using and turn up the heat. ‘Flame’ the brandy if you like - then add the crème fraîche. Stir well until everything is coated with the crème fraîche. Season to taste with the black pepper and paprika, turn onto the rice or a hot plate and garnish with the parsley. Serve immediately with a crisp green salad.
