4 pieces of Chinese Stem Ginger in syrup

Apricot & Ginger Smoothie

Method

Soak the dried apricots in water overnight. Add the apricots, ginger and ice cubes to a blender, also add a tablespoon of both the apricot flavoured water and syrup from the ginger. Blend until the ice cubes break down. Finally add the yogurt, around 3 tablespoons to half a 450g pot. Give it a final blend and pour into a glass to serve.
