Ingredients

5 sheets of gelatine
150ml elderflower cordial (we like Bottle Green)
500ml sparkling white wine
100g apple, slices
25g blueberries
100g Rachel’s Low Fat Apple & Elderflower Bio Live Yogurt

Serves: 4

Preparation time: 5 minutes, overnight to allow for setting

Apple & Elderflower Jellies

Jelly just got sophisticated with this recipe!

Method

1.Soak the gelatine leaves in cold water for 5 minutes.

2.In a small saucepan add the cordial and heat slightly until tepid, add the wine.

3.Squeeze the access water from the gelatine and add to the cordial wine mix.

4.Leave to cool.

5.Divide the jelly into glasses or jelly moulds, add the fruit and leave to set overnight in the fridge.

6.To serve spoon over the yogurt to fill the glasses and decorate with a few blueberries.
